| David Stanley Red Fern | Why buy a bottle when you can bring your own? | | No liquor license? No problem! Well, sort of. The State Liquor Authority frowns on the practice of bringing one's own wine or beer to a restaurant and makes it difficult to do so legally. But Fork in the Road, maverick that it is, lists its 10 Best BYOB Restaurants in the city. Top honors go to Lucali (575 Henry Street, Brooklyn), Abistro (154 Carlton Avenue, Brooklyn), and Di Fara (1424 Avenue J, Brooklyn). But which BYO restaurant earned the number one spot? Here's a hint: It claims to be the only one of its kind in the entire country. Maybe even all of North America. And maybe even the entire Western Hemisphere. Now, doesn't that sound like it's worth picking up a bottle or two and checking out?
Fany Gerson, of Mexican frozen-treats purveyor La Newyorkina, discusses her small brand : "I love stone fruit so want to take advantage of that. I want to do more sorbets and water-based treats than ice creams...Because in Mexico that's what you see most. I think it's because of the abundance of fruit that we have. I think if you're going to indulge, you should when it's the best butter or milk or chocolate. I definitely have a desire for that, but also there's something very unique to a product that is both natural and delicious. You can make a popsicle that's, like, 80 calories without needing to advertise it. When I make paletas, there are days that I eat quite a few and I don't feel guilty, I feel good."
Abigail Gullo of Fort Defiance (365 Van Brunt Street, Brooklyn) weighs in on the resurgence of vodka among serious bartenders. "I think anything that is brewed in small batches will always give bartenders like us pause. They're so different, especially when you're creating new cocktails. Sometimes that little difference in flavor can make a big difference in the cocktail you're working on." | Devi (8 East 18th Street) may have lost one chef and partner -- Hermant Mathur, who left recently to open Tulsi -- but the restaurant is still going strong with Suvir Saran at the helm. This weekend, it's hosting a Valentine's brunch for $25, which includes two courses and a cocktail. Saran shares the recipe for one of the dishes, Savory Indian Crepes (also known as cheela) with Tomato-Shallot Chutney over at Fork in the Road. "The smell of cheelas is the best way to wake up in the morning," says Saran. "It doesn't matter where I am, I always crave them. This combination of flavors is so perfect and savory with the herbs, spices and onions. You want to make sure that you get as much chutney on the crepe as you can with each bite. And, with a recipe as simple as this one, it would be an easy but impressive way to wow your loved one this Valentine's Day." The surprisingly un-mobbed Porsena (21 East 7th Street), the latest effort by Sara Jenkins of Porchetta, is turning out soul-soothing pasta and more. Crostino of bottarga di tonno ($8) arrives to the table looking like harmless cheese on toast, but gets an extra umami boost with a sprinkle of salty tuna roe. Mussels in a saffron and white wine broth ($9) are aromatic and perfectly plump. But the pièces de resistance are undeniably the pastas. Anneloni with mustard greens and spicy lamb sausage ($16) is a flavor bomb, rich and peppery, with a lush, springy texture to the pasta. Spaghetti with clams ($16) is subtler: sweet-briny in-shell Manila clams are tossed with garlic and parsley and have an almost citrusy zest.
Angelo Sosa of the now-defunct Xie Xie has been moonlighting as a kati roll cook at Kati Roll Company (49 West 39th Street), where he created a new shrimp masala roll. The word on the roll is that it's definitely flavorful, if a bit overcooked. The onions are pleasantly tangy, and cilantro sauce adds dimension. Chiles give off a decent amount of heat.
