Each week in The Daily Shot, Fork in the Road describes a drink that a given bar makes particularly well. After a year of sampling the best tikis, 'tinis, sours, swizzles, fizzes, cobblers, juleps, toddies, punches, and everything in between, it lists its 10 Best Cocktails of 2010. Vandaag's (103 Second Avenue) namesake gin cocktail, The Cortado at Death & Co. (433 East 6th Street), and The Dead Bastard at Painkiller (49 Essex Street) all make the top five. But who wins top bibulous honors? Find out if you've sipped it. (And, if not, get thee to the bar in question posthaste.)

Nick Morgenstern, who has just opened the new market-driven restaurant Goat Town (511 East 5th Street) in the East Village, reveals what he hearts doing when he's not in the kitchen : "I love fast cars. I've been racing since I was a kid. I grew up in an auto shop, and worked for Porsche and Saab when I was in high school. I've got a car in Hawaii, a car in California, a couple cars here, and I belong to the car club in Tribeca. I don't even get to drive anymore! I drive to the restaurant supplies store and then back to the restaurant. I definitely like to go fast."

T.J. Lynch of Highlands (150 West 10th Street) and Mary Queen of Scots (115 Allen Street) is one of the many cooks who have traded in their kitchen knives for a bar spoon: "I came to my senses and realized that cooking for a living sucks...It's long hours, low pay, lots of stress. You don't have a life...I don't need to ruin my life by working 80 hours a week...[Bartending] is more immediate gratification, definitely. You can make something for them, give it to them, and get the pay off right there. When you're in the kitchen slaving away, pumping out 250 dishes, you're not going to see anybody's response to it."


Have you ever made egg nets? Or even know what an egg net is? This week, instead of merely giving you a great recipe from one of the city's best chefs, Fork in the Road is giving you a chance to see exactly how the toque himself prepares it. Ty Bellingham of Kittichai (60 Thompson Street) shares the recipe for his Chicken and Coconut Wrapped in Egg Nets, and also provides a handy little video demonstrating how to prepare them. Eggs nets can be tricky since they involve deft maneuvering and bravery in the face of immersing your fingers in whisked egg yolks. The rest, if the video is to be believed, is a relative breeze.

Casetta Organic Coffee (11 West 8th Street) has opened in Greenwich Village, serving baked goods by Sarivole organic bakery, which also provides sweet treats to Pubblico Espresso Bar, Tiny's Giant Sandwich Shop, and Brooklyn's Milk Bar . The space is poky, with no seating and room for little more than one at a time, but has a sizable selection of cookies at $2 apiece, from almond butter to pumpkin chocolate chip, and several gluten-free options are available. Wash that cookie down with a cup of java from Rook, an organic, fair-trade roaster from New Jersey. Or get a hot chocolate made from Taza chocolate, which specializes in - you guessed it - organic, fair-trade cocoa.

Fork in the Road got the early word on Hung Ry (55 Bond Street), which specializes in hand-pulled noodle soups. The bowls run $12 to $19.50 - not exactly Chinatown prices, but then where below Canal Street can you get a salad of perfectly cooked lobster with black bean shoots, thinly sliced radish, and cucumber slices? The noodles are available in thin and thick versions. The thick, in a veal cheek soup chock-full of marrow, liver, Japanese sweet potato, and quince, is a treat for the offal lover. But those afraid of insides beware.
